SERVES 1 • READY IN 25 MINUTES OR LESS

Ingredients:

Meatballs

1 stalk celery, minced

½ tsp onion powder

1 tsp hot mustard

1/8 tsp salt

1 portion ground chicken

Cauliflower

2 cups cauliflower florets

½ tsp oregano

¼ tsp garlic powder

¼ tsp ground black pepper

1/8 tsp salt

Cooking oil spray

2 tbsp vinegar based hot sauce, or just enough to your spice tolerance

Greens of one green onion sliced for garnish

Directions:

Preheat air fryer to 400F.

Mix meatball ingredients together and form into 6 balls. Toss cauliflower with oregano, garlic powder, black pepper and salt. Spray meatballs and cauliflower with cooking oil spray. Air fry for 7 minutes. Carefully turn meatballs and cauliflower. Air fry for 5-10 more minutes or until meatballs are 165F and cauliflower are charred.

Toss meatballs with hot sauce. Garnish with green onion. Serve.
